Cauliflower and Radish Salad
serves 4
Ingredients
- 1 hd cauliflower, florets, blanched and cooled
- 1 bn radishes, trimmed and quartered
- 8 lvs Boston lettuce
- 2/3 C plain yogurt
- 4 t tahini
- 1 t honey
- chives, chopped
- Option: use a dressing other than the yogurt mixture
Instructions
- Whisk together the yogurt, tahini and honey. Season to taste.
- Toss the cauliflower and radishes in the dressing.
- Plate the lettuce leaves, top with the cauliflower mixture, garnish with chives, and serve.
